Joyful Cooking: A Few Easy Baked Salmon Recipes

Salmon is one of the most nutritious foods on the market. It is full of omega 3 fatty acids, which reduce overall cholesterol while boosting the good cholesterol. Good cholesterol reduces the risk of cardiovascular disease, including high blood pressure. Salmon recipes, like the increasingly popular tilapia fish recipes, are easy to do, mostly because a cook would not want too many ingredients and too much fussing to mask salmon’s wonderful taste.

Good quality salmon is not cheap, but it is worth the price. Among the types of Pacific salmon that are great in baked fish recipes are king, Coho, sockeye, pink and chum. All of these salmon can be bought whole, or in steaks or fillets. The hue of famous pink flesh varies from species to species.

The sockeye is deep salmon, the Coho and pink are a little paler and the lightest salmon is the chum. The color of the king salmon’s delicately flavored flesh can be from deep glistening red to nearly white. Alas, the pink color of farm raised salmon comes from the beta carotene they are given to make their flesh just that color, but they are also perfectly good to eat, and perfectly delicious.

Baked Dijon Salmon

Here are some easy baked salmon recipes.

Baked Salmon in Red Curry Paste

  • Four pieces of salmon fillets, about 6 ounces each
  • 2 tbs. lime juice
  • 1 tbs. plus 1 tsp. of rice vinegar
  • 1 tbs. brown sugar
  • 1 tsp. nam pla (fish sauce)
  • ¼ tsp. Thai red curry paste
  • 2 tbs. chopped fresh cilantro, divided
  • 1 tbs. chopped fresh mint
  1. Preheat the oven to 425 degrees F.
  2. Whisk together the lime juice, brown sugar, red curry paste, vinegar, nam pla, 1 tablespoon of cilantro and mint. Place the salmon in a buttered baking dish and pour the dressing over the fish. Bake for 12 to 15 minutes or until the salmon flakes.
  3. Sprinkle with the rest of the cilantro and serve. Serves 4.

Another of the easy baked salon recipes is:

Baked Salmon with Tomato, Orange and Olives

  • Four pieces of salmon fillets, about 6 ounces each
  • 1 tbs. olive oil
  • 1 cup chopped onion
  • 2 cloves minced garlic
  • 1 14 oz. ounce can of diced tomatoes
  • ¼ cup of green, pimiento stuffed olives, chopped
  • 1 tsp. orange zest
  • Supremes from a large orange
  • ¼ tsp. salt
  • ⅛ tsp. of fresh ground black pepper
  1. Preheat oven to 450 degrees F.
  2. Heat the oil in a skillet over medium heat. Cook the onion and garlic two to three minutes or until the onion is translucent. Add the tomatoes, supremes, orange zest and olives and cook an additional five minutes, until well blended.
  3. Sprinkle the salmon with salt and pepper. Arrange in a baking dish and cover with the tomato mix. Bake for ten minutes or until salmon just flakes. Serves four.

Salmon Baked With Brussels Sprouts

  • Four pieces of salmon fillets, about 6 ounces each
  • 1 lb. Brussels sprouts, trimmed and halved
  • 2 tbs. olive oil
  • ½ tsp. sea salt
  • ¼ tsp. freshly ground black pepper
  • Preheat oven to 450 degrees F.
  • Toss the brussels sprouts with the olive oil and season with the salt and pepper. Place in a single layer over a baking sheet. Roast for about 10 to 15 minutes. Remember to toss occasionally.
  • Sprinkle salt and pepper over the salmon fillets. Make room for them in the center of the Brussels sprouts, and then bake till the fish is done, about 10 more minutes.

Salmon Florentine (This entry for easy baked salmon recipes is salmon baked on a bed of spinach! Very nutritious!)

  • 2 cups of cooked or canned salmon
  • Milk
  • ¼ cup butter
  • ¼ cup flour
  • ½ tsp. Dijon mustard
  • ¼ tsp. salt
  • ¼ tsp. Tabasco sauce
  • 1 ½ tsp. grated Gruyere cheese
  • 2 cups cooked and drained spinach
  1. Preheat oven to 450 degrees F.
  2. Drain and flake the salmon. Reserve liquid.
  3. Add milk to the salmon liquid to make 1 ½ cups.
  4. Melt the butter in a sauce pan. Add the flour and whisk vigorously till it is blended. Boil the milk and salmon liquid mix, and then add all at once to the roux. Whisk till smooth.
  5. Add mustard, Tabasco sauce and most of the Gruyere.
  6. Place the spinach in 4 buttered casseroles and top with the salmon. Sprinkle with the rest of the cheese and bake 15 minutes.

Dilled Salmon on a Bed of Rice

  • Four pieces of salmon fillets, about 6 ounces each
  • 1 med. chopped onion
  • 3 diced tomatoes
  • 3 cloves of minced garlic
  • ½ lb. of white button mushrooms, sliced
  • 3 tbs. fresh chopped dill
  • 3 tbs. lemon juice
  • 2 cups cooked basmati rice
  • Salt and pepper to taste
  1. Preheat oven to 350 degrees F.
  2. Sauté onion, garlic, mushrooms, and tomatoes until the onion is translucent and the mushrooms have given up their liquid. Add the lemon juice and fresh dill, add salt and pepper, then remove the pan from heat.
  3. Butter or spray a baking dish.
  4. Place a layer of rice over the bottom, top with salmon, then top with the vegetable mix.
  5. Cover the pan and bake for 20 minutes or until the fish is done. Serves 4.

Salmon Baked in Cream Sauce (This one may be a little fancy!)

  • 3 lbs. salmon fillet
  • 6 tbs. butter
  • 5 shallots, chopped
  • 1 bottle of dry white wine, like Meursault
  • 1 bouquet garni
  • Croutons
  • 6 egg yolks
  • 1 ¼ cups of heavy cream
  • Salt and pepper to taste
  1. Preheat oven to 325 degrees F.
  2. Heat 2 tablespoons of butter in a casserole. Add the shallots and cook till golden. Put the salmon on top of the shallots, pour in the Meursault, and add the salt, pepper, and bouquet garni. Dot the fish with butter. Cover the casserole and bake for 40 minutes. Baste during cooking.
  3. Remove the fish from the casserole and arrange it on a heated serving dish. Keep warm.
  4. Remove the bouquet garni from the casserole and reduce the cooking liquid by half on the stovetop. Then, reduce the heat.
  5. Beat the egg yolks with the cream. Pour into the cooking liquid and whisk over a gentle heat till the sauce is light. Pour the sauce over the salmon and garnish with the croutons. Serve at once.

This is one of the easiest easy baked salmon recipes of all. Salmon Baked With Dill

  • Four salmon steaks
  • 4 tbs. butter
  • 1 tbs. chopped fresh dill
  • Salt and pepper to taste
  1. Preheat oven to 450 degrees F.
  2. Plop the salmon steaks in a skillet, place a few of the butter slices on top, season with salt and pepper. Cook ten minutes, then flip them over, then add the rest of the butter, salt, pepper, and dill. Cook five minutes longer until the fish is done. Serves 4.
