Chicken Fricassee
Ingredients:
6 Chicken Thigh Fillets (Diced)
#8531 cup Plain Flour
3 tbsp Butter
1 Onion (Diced)
4 Garlic Cloves (Crushed)
2 cup Chicken Stock
150 ml Cream
150 g Potato (Washed, sliced thinly)
1 Carrot (Grated, sliced thinly)
#189 cup Green Olives (Chopped)
Directions:
Dust chicken in flour and season. Pan fry in the butter over medium heat until just sealed
(roughly 1 min). Add onion, garlic, potato, carrot and olives cooking for a further for 1 min
Add stock and cream, season with salt and pepper and simmer for 30 minutes. Serve with rice
if you like.
