Tonight's Dinner: The Classic Christmas Goose! As I was invited to a friend's home for her Buon Natale Italian xmas dinner I didn't "cook my goose" Sunday (I had offered to roast the bird for her xmas dinner but she really wanted an Italian meal like she grew up with). I haven't had a #ChristmasGoose for many years, possibly clear back to my Colorado days when goose was a regular entrée in the xmas dinner rotation - Prime Rib, Ham, Goose - and have been looking forward to this since being Goosed ..er.. given the bird last fall. So I roasted it yesterday after having eaten all the Buon Natale leftovers the day before. Covered and suspended over a waterbath in the roaster pan, the goose stuffed with oranges, plums, onion and a lemon sweat-roasted for 3½ hours before being uncovered and the skin quickly browned under the broiler. The Goose was accompanied by a Wild Rice & Mushroom Pilaf, sautéed Green Beans with Red Pepper juliennes and toasted Pecans, and of course a tossed salad. I made a thin gravy from drippings and stock from simmering the giblets and deglazing the pan with Sherry. #TonightsDinner #Goose #WildRice #Pilaf #GreenBeans
