One day I started asking questions and discovered that lots of the cool successful restaurants harass their women in the kitchens or don’t pay good salaries to their employees, I also found out that lots of small producers where facing bankruptcy because those restaurants either never pay them or take months or years to pay but keep ordering products promising that they will pay soon. Small producers want to work with those chefs, female cooking students too, they are important, so they shut up, and continue delivering products or taking the harassment. I was so angry and I wanted to do something about it. I realize I have a lot of power, everybody has it actually, is the power of money. I made a list of bad restauranteurs and abusive chefs and remove them from my recommendation for my guests and of course from my tours (I won’t publish that list this is not a witch hunt) I want to give my money and my guests money to the good people, I don’t care if i stop going to the cool places or if I never eat at the best ones I actually don’t give a f**k if those chefs hate me (which they do) i think that the power of my money even if it’s only a dollar can eventually change things. If assholes stop profiting their bad behaviors maybe they will stop existing. I think that it’s important to make a stand and to start supporting the good ones, the producers, cooks and chefs that are making a difference and creating a better world. So, sometimes our recommendations won’t include places you might want to try, or the ones all the media is talking about, we might recommend the underdogs and the small ones. We are always learning and sometimes discover that a chef we support changed and now is not tha, and that’s ok, we just adapt our tours to only support awesome people. #changetheworld
