Today's Brekkie: 🧀Cheesy Grits & Shrimps!🦐 I'd planned on having #Grits for Brekkie this morning instead of hashbrowns, but making a Louis Ceasar Salad for dinner last night I noticed I had more shrimps than expected and needed to use them up soon ... and Brekkie was the next opportunity! Now Shrimp & Grits is a traditional breakfast dish in the #Lowcountry of the southern coastal region of the United State, though many others consider it more of a lunch or supper dish. It's fairly simple to prepare once you've got your grits cooked. Yes, if you must, you can use "quick" (5 minute) grits from that Quaker preacher guy, but none of that "instant" stuff! "Real" grits take 25-30 minutes to cook like other whole grains - rice, barley, oats. While grits are steeping, cook up a slice of bacon per serving, save the rendered grease in skillet, dice the cooked bacon and add to grits. In bacon grease saute some minced garlic, sliced scallions and diced bell pepper (red or orange looks best, but green is good too, and if you want a little kick add or substitute a jalapeño!) Add shrimps to veggies and sauté quickly, sprinkle with tsp flour and cook into a roux, add a little (⅓ cup/serving) chicken or fish or vegetable stock to pan and stir until sauce sets up. Stir ⅓cup/serving cubed or grated Cheddar cheese into cooked grits, and place serving of Cheesy Grits in shallow dinner bowl and smother with Shrimps and sauce. For Brekkie or Brunch I like to poach an egg in the Shrimp sauce to top off my Grits & Shrimps.
