  • Finely diced onion
  • Diced Limes
  • Thinly sliced radishes
  • Diced Avocado
  • Chopped Cilantro
  • Ground Chile Piquín
  1. You can change around the ingredient quantities according to the number of people you will be serving.
  2. Instructions to make Mexican Pozole: The simple steps to follow while making a Mexican Pozole is as follows:
  3. The first step is to prepare onions and garlic. First chop the onions and then move to peeling the garlic cloves. The next step is to chop the jalapenos. Also rinse the hominy and leave it to dry.
  4. As you will be using Ancho chilies for garnishing, it is advisable that you boil them in a separate container.
  5. Place the meat that is the pork shoulder in a saucepan and pour some lightly salted water on to it until it is covered.
  6. Add to the pork in the saucepan, half chopped onion the two peeled cloves of garlic, cumin powder, pepper, and oregano. This will release a mouth watering aroma of the spices.
  7. Now it is time to boil the content of the saucepan. Let it boil at medium heat. In case any foam is formed, skim it off. Next step is to reduce the heat and cover it and let it cook for 45 minutes.
  8. Now remove both the meat and the broth from the saucepan and reserve them both.
  9. Toss the remaining onions, garlic, and jalapenos and fry them in oil until translucent. Then add the remaining of the spices to it and stir for some time.
  10. Now take the reserved pork and cut it into small cubes about 1 inch wide and add it to the saucepan for further cooking.
  11. Now add the canned hominy and stir for a few minutes. Now it is time to add pork broth, if you are unable to find pork broth then you can simply use chicken stock. The flavor is almost the same but the pork broth brings out the flavor more beautifully than chicken stock. Add 2 to 4 cups of pork broth along with jalapenos and green chilies.
  12. Cover it up and cook for 45 to 60 minutes. Let it simmer until the meat and hominy are soft.
  13. If you want the onions and chilies to blend in with the dish then you can cook for extra 60 minutes. It is totally up to you.
  14. The last step is garnishing. Garnishing is quite easy. Garnish with lots of lime or wedges of lemon, the chopped cilantro, and the diced radishes and shredded cabbage. If you want you can also use fried corn tortillas for garnishing.
  15. As you remember we have left the Ancho chilies to boil in a separate container, when the Ancho chilies are soft enough which take about 15 minutes. You can blend the Ancho chili with one and half cups of water, some salt and black pepper, 2 tablespoon of diced onion and one clove of garlic. Blend it in a mixer and use it in your Pozole. The thick pulp from this blending is extremely spicy and can be used by you if you want to give your Pozole a hot and spicy flavor. It can be pretty HOT so beware before you add the extra spicy pulp to your Pozole.
