"Oh my gosh, the cookies are so good! Did you make them yourself?" This is the phrase that anyone would love to hear. Baking cookies is an easy and simple act to spread warmth and joy to anyone, and seeing those smiling faces when you share your delicious homemade creations is surely one of life’s greatest joys.

 

Nevertheless, sadly, traditional cookies require lots of sugar content that may not be good for those with certain health problems such as diabetes. Diabetes is becoming more and more common, and these days a lot of people are monitoring carefully their sugar intake. The sad thing about sugar is that it adds a lot of empty calories to our traditional baked goods which is not very good to the health, be it for non-diabetics and diabetics alike.

 

When the time comes that we share our homemade cookies, we would surely want it to be a healthy experience in both the body and soul right? Additionally, it would be great if everyone, including those with diet restrictions, would be able to enjoy our homemade creations. Luckily for us, there are already a lot of excellent sugar substitutes in the market that we can utilize in order for us to bake without having to use sugar. Do not worry, these would taste just as good, plus it is good for the health!

 

Our first priority when we are making sugar free cookies is to remove all the sugar from the recipe. However, the question is: What do we replace sugar with? Sucralose is one of the best options that you can use. A good thing about sucralose is that it is heat stable. This means that when exposed to extreme baking temperatures it still does not lose its sweetness. Another interesting thing about sucralose is that it is also made from sugar. However, unlike sugar, it cannot be metabolized by the body which makes it a good choice for all sugar free recipes.

 

Even though sucralose is a good sugar replacement, there are differences in the ways sugar and sucralose function in recipes. If we would be able to have a full understanding regarding these differences, this would be the key to successfully making delicious sugar free cookies (or other baked goodies).

 

So that we could get more in depth regarding baking cookies using sucralose, it is best for us to understand first and foremost the qualities that sugar and sucralose have and its effect to the cookies. The main element that sugar could give to a cookie is, of course, its sweetness. However, sucralose is also sweet. In fact, it is twice as sweet as sugar. With this, do keep in mind that when you are baking cookies using sucralose, you should add in less sucralose as compared to using sugar.

 

If you are a sweet tooth and want to inject extra sweetness to your cookies, feel free to add a little more. The good thing about sucralose is that it does not need to be measured precisely for the finished product to come out perfect.

 

When you compare it sugar, on the other hand, precise measurements should be implemented since the tendency when it comes to sugar is that it changes its form when exposed to extreme heat. The main function of sucralose in this sugar free cookie recipe is to add sweetness. It does not have much impact on the spreading, rising and texture of the finished cookie.

 

Other than texture, there is another area where sugar and sucralose function a bit differently. Those crunchy and chewy cookies that we all love have the texture they do because of the sugar’s ability to caramelize and spread when baked. Nevertheless, there are a lot of sugar free cookie recipes which yield similar results. One example is the peanut butter cookie recipe. If there is less flour in the recipe, the chewier and crunchier your cookie will become.

 

The golden brown color of the cookies that make it look delicious is due to the sugar’s ability to melt and caramelize when exposed to heat. However, fear not, it is not so difficult to achieve the same effect when making the sugar free cookies. All you have to do is to coat the cookies with something which will also turn brown in the oven.

 

A very easy and simple way to do this is to spray your cookies with cooking spray before baking them in the oven. Another simple way I discovered is to brush them with a little bit of milk or you can even use whipped egg white before baking them. If you decide to use egg whites, it would add not only to the browning, but to the glossing of the cookies as well.

 

Another ability that the sugar possesses is that it can moisten the baked goods. Still, this can be easily copied or replicated in our sugar free cookie recipes. You can start by using a recipe which contains a lot of moist ingredients with no sugar added like pumpkin, pureed fruit or perhaps apple sauce.

 

Here is another trick, all you have to do is to add about half a cup of soft tofu to your batter. The tofu would make your cookies moist and since it has almost no taste at all, this would not be in conflict with the other flavors in your cookies.

Sugar Free Cookie Recipes

 

Sugar Free Chocolate Chip Cookies

 

Ingredients to use:

 

  • 1 mashed banana
  • ¾ cup of brown rice syrup
  • ¼ cup of soy milk
  • ¼ cup of vegetable oil
  • 3 cups of flour
  • ¼ teaspoons of salt
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 2 cups of dark sugar free chocolate chips

 

Instructions:

 

  1. The oven should be pre-heated up to 325 degrees. Thoroughly combine or mix together the banana, brown rice syrup, soy milk and vegetable oil.
  2. In another bowl, add the salt, flour, baking soda, and baking powder. Then add them to the banana mixture you just made. Stir well to perfectly combine.
  3. After doing the mixing, you may now add in chocolate chips.
  4. After doing the given procedures, you may now bake the cookies for 10-12 minutes or until they are lightly golden brown.

 

Peanut Butter Sugar Free Cookies

 

Ingredients to use:

 

  • 2 cups of creamy peanut butter
  • 2 cups of Splenda (Splenda is a certain brand of artificial sweetener made of sucralose)
  • 2 eggs
  • 2 tsp of vanilla extract

 

Instructions:

 

  1. The oven should be preheated up to 350 degrees.
  2. You may now combine all the ingredients given in a large mixing bowl and beat well until well combined.
  3. After mixing the ingredients well you may now put it on a greased cookie sheet, and bake for 8-10 minutes or until they begin turning brown.
  4. If you want to increase the browning you may spray the cookies with cooking spray before placing them in the oven.
