900g Onions
50g Butter
900ml Vegetable stock

How to make French onion soup

Making French onion soup is rather easy, the trick is getting the full flavour of the onions into the soup.

Directions

1) Begin by preparing the onions. They need to be very finely sliced

2) Melt the butter in a saucepan on a low heat

3) Add the onion slices to the saucepan

4) Cover the saucepan and fry the onions in the butter for about 20 minutes or until the onions have begun to go a nice golden colour (the trick is to fry the onions very gently to allow for maximum flavour)

5) Remove the cover and turn up the heat and fry the onions for another 20 minutes until the onions have caramelized

6) Pour in the stock and bring the soup to the boil

7) Simmer for another 20 minutes

8) Toss in a pinch or two of the salt and pepper

9) Serve and enjoy!
