Cabbage Rolls (unrolled) and Peanut butter cake recipes
Dream Dinner:
Ok, maybe not your dream, but certainly mine and my family's!! I was given a small head of cabbage from a friend and needed to do something with it. It wasn't quite big enough to make cabbage rolls (Galumpky's if you prefer) But darn it, we wanted some!! My pregnant daughter said "Mom, we have tons of peanut butter in the cupboard, can't you make peanut butter cake?" So we had a menu in an isntant!! Galumpky's and peanut butter cake! before you get started on the cake, better get the Galumpky's started!
What you will need:
Large electric skillet with lid
Large mixing bowl
Sharp knife
measuring cup
Ingredients:
3 lbs good ground beef (ground round is perfect if you have it)
1 Large onion - chopped
1 cup uncooked rice
6 oz tomato paste
1 tsp chopped garlic
1 tsp Italian seasoning
1 tsp salt - pepper if desired
1 cup water with 2 tsp. beef boullion added and dissolved.
2 eggs
1 small head of cabbage - chopped
1 16 oz bag of saurkraut
1 16 oz can tomatos
1 28 oz can tomato sauce
Time to get your hands dirty -
Mix first 9 ingredients well, squish it all in there!
In electric skillet place the can of tomatos in the bottom, spread aournd so you have a nice layer. Add a layer of cabbage. Roll meat into balls, about 1/2 cup or so each. Place on top of cabbage, keeping separated. Layer more cabbage and 1/2 saurkraut on top of meat, pour 1/2 can of sauce over this. Finish up rolling the meat and place on top, topping with remaining cabbage, saurkraut and tomato sauce. Cover and simmer on low (200 degrees or less) for about 1 1/2 hours, until rice is tender.
Serve and ENJOY!!
While the Galumpky's are cooking, time to make the cake! This also includes Peanut Butter frosting!
What you will need:
Large mixing bowl
electric mixer
spatula
large sided cookie sheet (I used 12 x 15 x 1/2 inch - pan) sprayed with non-stick spray
Ingredients:
1 stick butter/margarine
1 Cup peanut butter
4 eggs
3 Cups flour
3 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/2 Cups milk
Cream butter and peanut butter together. Add eggs, mix. Add dry ingredients, alternating with milk. Continue mixing. When all blended mix on high for 2 minutes. Pour into prepared pan, bake at 350 degrees or until toothpick comes out clean.
While cake is baking, time to make the frosting!
What you will need:
mixing bowl
spatula
electric mixer
Ingredients:
2 Cups powdered sugar
1/2 tsp salt
1/2 cup peanut butter
3 TBSP butter or margarine
1/4 cup milk
Cream butter and peanut butter, add powdered sugar and salt slowly, adding milk while blending. Beat until smooth. Will not be too thick.
When cake is almost cool frost.
Now is the time to decide - eat more Galumpky's or more cake.... Decisions, decisions...
