Creamy Chicken Salad

First, we have to gather all the ingredients needed on this recipe.

Ingredients are as follows:

  • 2 cups of boneless and skinless chicken breasts
  • ½ tablespoon lemon juice
  • ¼ cup of fat-free plain Greek yogurt
  • ½ tablespoon white wine vinegar
  • ¼ cup mayonnaise
  • ½ tablespoon mustard
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup almonds
  • ¼ cup cranberries, dried
  • 1/3 red bell pepper, chopped
  • 1 orange

Now that we have gathered all the ingredients, it is now time to prepare our creamy chicken salad.

Follow these steps:

  1. Slice the chicken into strips and place it in a pot with boiling water. Let it boil for about twenty minutes, or until cooked. Remove the chicken from the pot and allow it to cool. Once the chicken is cool enough to handle, shred it using a fork until you have the desired meat consistency.
  2. In a small bowl, mix the plain Greek yogurt, lemon juice, mustard, white wine vinegar, salt, pepper, and mayonnaise. Stir continuously until fully combined.
  3. Slice the red bell peppers and almonds. Add it to the mayonnaise mixture. Add the chicken and cranberries and stir to combine.
  4. Let it sit for at least thirty minutes before serving.

Note: On this recipe, I placed the chicken salad in an orange (with insides removed). You can serve this recipe on a lettuce, or avocado, or wherever you like. The presentation of this recipe depends on you. Serve and enjoy!
