The Best Mexican Beef Recipes: The Special Mexican Ground Beef Taco

Mexican foods are undeniably delicious and a favorite of many people. In addition, the well seasoned beef in Mexican recipes is so lovely together with the other healthy and tasty ingredients.

So now, I will be sharing with you one of my best Mexican beef recipes: the special Mexican ground beef taco.

Mexican Ground Beef TacoIngredients:

  • 3 ½ pounds of fresh roast beef (sliced into chunks, preferably prime rib)
  • 1 ½ jalapeno (seeded and should be roughly sliced into pieces)
  • Fine sea salt
  • 2 ½ tablespoons of cooking oil
  • Ground pepper (for seasoning)
  • 8 garlic cloves (should be roughly sliced into pieces)
  • 1 ½ fresh onion (should be roughly sliced into pieces)
  • 2 ½ cups of chicken stock
  • 1 tablespoon of grounded cumin
  • 1 poblano chili (should be chopped, roasted, skinned, and seeded properly)
  • 15 ounces of canned and diced fresh tomatoes
  • 1 tablespoon of Mexican oregano (dried)
  • 3 fresh bay leaves
  • 1 ½ tablespoon of fresh cilantro (should be finely chopped)
  • 8 sprigs of fresh thyme
  • 1 ½ cup of condensed beef broth
  • 1 ½ cups of medium salsa (chunks, you should have a food processor for it to be finely whirled/chopped)
  • 1 ½ tablespoon chili powder (preferably New Mexico)
  • 1 teaspoon of garlic powder or granulated garlic
  • ½ cup of reserved broth (from cooking)
  • ½ cup of sweet corn
  • ¼ cup of fresh bell pepper
  • 8 loaves of large pita bread

Instructions in making the special Mexican ground beef taco:

  1. Prepare beef in a large bowl and mix the salt and pepper properly. Put it in a pot with 2 ½ tablespoons of cooking oil. (The pot should be preferably heavy bottomed). Put it on medium to high heat until all piece of the meat turn brown. That is for 12-15 minutes approximately. Do not overcook.
  2. Remove the beef and put it on a plate. Add garlic, onion, carrot, jalapeno, and poblano to the pot until it softens around 8-10 minutes. Cook it on medium heat. Mix the tomatoes, chicken stock, beef broth, thyme, fresh cilantro, bay leaves, cumin, and dried oregano. Stir very well .Put the beef into the pot again with the mixed ingredients. Stir and bring it to a boil. After boiling, cover the pot and cook it in an oven at 350 degree for 1 hour and 30 minutes or until beef softens.
  3. After cooking, let the beef cool in the stock for 45 minutes to 1 hour. Remove the beef after cooling and then grind it or shred it.
  4. Prepare a large pan where you can add the beef, and all ingredients listed and the salsa. Stir very well for the flavor to develop and let it simmer on a low heat for 15-20 minutes (do this until the juices completely evaporate).
  5. Remove it now from the heat and put it on a large glass plate with your pita bread and carefully pile the beef and all condiments like the fresh tomatoes, onion, cilantro, sour cream, bell pepper, shredded fresh Napa cabbage, and sweet corn and do not forget the salsa.
