I love Mexican food. I love the distinct flavors of authentic Mexican recipes that is best loved by not just Mexicans but other peoples and cultures as well. Who doesn’t love tacos, tortillas, and nachos? Although of course, Mexican food and cuisine go beyond the most famous dishes identified to most people.

Mexican food which originates in Mexico is known for its use of varied techniques, flavors, spices and ingredients, and colorful decoration which is only found in the native country. Thousands of years and the intermingling of indigenous cultures have led to the development of what Mexican cuisine is as of this day.

Truly, Mexican food has found a great following in the global scope because now it is already considered as one of the world’s intangible cultural heritage which was officially declared by UNESCO. Naturally, since potatoes are native to the Americas, the potato is definitely a part of Mexican cuisine.

It is funny how a lot of children and even adults who hate vegetable dishes are drawn to potatoes and potato dishes. French fries, hash browns, mashed potatoes. Ideally, potatoes should be stored in a clean, dry place. The potatoes should not be subjected to high temperatures and sunlight because this can cause that green discoloration and sprouting condition which is best to be avoided.

It is important to remember not to place your potatoes in the refrigerator as this can cause the undesirable taste of the potato when its starch converts to sugar. Also, it should never be placed beside onions because they can cause each other’s disintegration. Make sure to keep your potatoes in a paper bag or in a burlap bag when you store them.

The Best among Mexican Recipes with Potatoes: Mexican Spuds These divine Mexican spuds are to die for. It is perfect to be eaten at home, at dinner parties and at gatherings. It is a no fuss-food that is totally easy to make. Ingredients:

  • 4 russet potatoes (scrubbed)
  • 1 can (about 8 ounces) of tomato sauce
  • 1 pound ground beef or turkey
  • 1 tbsp chili powder
  • 1 cup cheddar cheese (cheddar)
  • 1 cup medium tomato salsa
  • ½ cup thinly sliced green onions (including tops)
  • 1 cup tomato (chopped)
  • Guacamole
  • Sour cream
  • 1 can of sliced black olives (drained)

Directions:

  1. With a fork, puncture the potatoes then cook in the microwave oven on full power, turning over once. After 15 minutes to 20 minutes, the potatoes should be tender when punctured with a fork.
  2. If not, continue baking t for another 45 to 50 minutes in the oven.
  3. Stir beef on high heat for 5 minutes until lightly browned and crumbled. Drain.
  4. Pour the chili powder onto the beef and stir the mixture for 1 minute.
  5. Add the salsa then the tomato sauce and then reduce the heat.
  6. Let it simmer uncovered for 5 minutes.
  7. When the potatoes are done, remove from the heat then slit the potatoes lengthwise then put a spoonful of meat into the "pocket" that I created.
  8. Make sure to also distribute the tomato, olives, onions, and cheese equally.
  9. This dish is perfect with sour cream and guacamole.
