What are Quesadillas?

 

Quesadillas are created from popular authentic Mexican recipes not just in Mexico, but all over the world. They start with a flour or corn tortilla (ranging in size from a small to a large circle) that is softened by warming. Recipes call for folding after stuffing or placing another tortilla on top before cooking. Some of the popular fillings for quesadillas are authentic Mexican ingredients or delicious ingredients from around the world, such as Queso Oaxaca, red or green salsa, onions, cooked vegetables, mushrooms, cooked meat, and sour cream. The following recipe features juicy ocean trout rather than beef, and adds to the flavor with black beans, fresh corn, shredded lettuce, salsa and cheese.

Recipe for Tequila Jalapeno Quesadillas

 

 

Begin by gathering all the necessary ingredients:

 

  • 8 whole corn tortillas
  • 16 to 24 ounces of ocean trout fillets (you can use any kind of fish fillet as an alternative)
  • 2 ears of corn, cooked
  • 1 medium-sized red onion, sliced into halves and chopped thinly
  • 1 medium-sized red bell pepper, seeded and sliced thinly
  • 2 Jalapeno Peppers (you can add more, if desired)
  • ¼ cup of Tequila
  • 1/3 cup of cilantro
  • ½ cup of black beans, cooked
  • ¼ cup of cheddar cheese, cut into thin strips
  • ¼ cup of Monterey Jack cheese, shredded
  • Shredded cabbage and lime slices for the garnish
  • Salt and Pepper
  • Favorite salsa

 

How to Make It:

 

  1. Once you have gathered all the ingredients, proceed with the preparation and cooking process.
  2. Prepare the corn ahead of time by grilling, boiling or steaming the ears. Allow to cool. Cut off the kernels in strips.
  3. Slice the bell pepper, Jalapeno peppers, onion, and cilantro. Stir-fry those ingredients in a medium saucepan together with the ocean trout fillets and a small amount of oil. Add the black beans and tequila once the ingredients are nearly done. Turn up the heat from low-heat to medium-high heat.
  4. Remove and set aside.
  5. Warm the corn tortillas in a skillet or the rack placed over the gas flame of a grill. Spread beans, vegetables and the fish over four of the tortillas. Top that mixture with the strips of corn and the cheese.
  6. Cover each with a remaining tortilla and sprinkle cheese across the top. Put it in the broiler for approximately 1 minute or until the tortillas have crispy edges and the cheese turns golden-brown.
  7. Serve with shredded cabbage and lime slices on top. Sprinkle with cilantro and spicy salsa immediately before serving. Add salt and pepper to taste.
