Old Fashioned Cheesecake - Country Recipes

Cheesecake is one of those desserts that we quite often don't make because it tends to be difficult to accomplish. This old fashioned country recipe for cheesecake is creamy and delicious and remarkably easy to make. It's one of the few that is lower in sugar and fat, and it can be make with low fat cream cheese as well as with regular varieties.

Cheesecake is a heavier dessert and should ideally be served with a light luncheon or a lighter summer dinner. Topped with fresh fruit, cheesecake makes an amazing dessert or just a mid day snack to stop a case of the "tired and hungry's".

Classic Country Cheesecake.

For the Crust You Will Need:

12 graham crackers (both squares)
1/4  cup corn oil margarine
2 tbsp cane sugar

For the Filling You Will Need:
5 blocks of cream cheese (8 ounce packages) at room temperature
1 cup sugar
7 teaspoons flour
4 tablespoons sour cream
2 large eggs at room temperature
1  and 1/2 tsp lemon peel
1 tsp vanilla

To Make the Cheesecake

Preheat oven to 350 degrees fahrenheit.

Crush your graham crackers with a food processor or barring that. place them in a gallon food bag and roll over them several times with a rolling pin until they are crushed to a sand like texture.

Mix in the sugar and then add the melted margarine.

Press firmly into the bottom of a cheesecake pan.

Put the cream cheese into a bowl.  Beat it with a low speed electric mixer and add the sugar slowly.  Sift the flour into the mixture, beating until blended.

Still on low speed, beat in the eggs until blended. Add the lemon and vanilla and beat for approximately one minute. Add the sour cream and mix it in thoroughly.

Pour the cream cheese filling over the top of the graham cracker crust in your cheesecake pan.

Bake for one hour and ten minutes or until the cheese mixture is firm and beginning to brown.

Turn off your oven and open the door to allow the cheesecake to set up for about half hour.

Set the cheesecake on a wire rack to cool for about two hours and then place it in the refrigerator to chill before serving.

Top the cheesecake with fresh fruit if desired, including blueberries, strawberries or raspberries, or a combination of all of the above.
